Max..the troublemaker!

He’s not really a troublemaker as it sound. He’s my first per ever! He’s so cute. Doxie’s small dog but has a big heart! I wanted to share some of his photos during the period of a year! Enjoy!

The breeder told me that mostly when you bring a new puppy home, the puppy needs to adjust, wont sleep at night or eat. Whining all the time. It’s normal things. As you see, in the picture, Max feels at home right away! LOL. He didn’t whine. He ate his food. Umm…he has a difficulty where to go..when he needs to use the potty. But other than that he’s really happy for the first night.

Meatballs and Mashed Potato with Mushroom Sauce

It’s really frustrating thinking what to make for dinner! Every day same question asked when dinner time. What’s for dinner? So anyway I decided to make something new to my family. Well it’s not really new. I made some gold sized meatballs, instead making a spaghetti and meatballs with tomato sauce, I made it with homemade mashed potato with White Mushroom Sauce. And it was a hit! Everything really came out good! As a result, I’m making it again tonight!

Meatballs and Homemade Mashed Potato with White Mushroom Sauce

Ingredients For Meatballs

1 lb Ground Pork
1 lb Ground Beef (I used 93/7)
1 small Onion diced
3 cloves of Garlic diced
1 small Carrots, grated
1 1/2 tbsp. Salt or more ( I used Herbamare)
Freshly Ground Black Pepper
1/2 cup Half and Half
2 Large Eggs
1/2 cup Italian Bread Crumbs

Mushroom Sauce Ingredients:

2-3 cups Mushroom ( I used Portobello,Shiitake, Cremini and White Mushroom)
1 stick of Butter
1 Medium Onions, Slice
3 tbsp. Olive Oil
Salt to taste ( I used Herbamare)
Freshly Ground Pepper
3-4 cups Half and Half

Homemade Mashed Potato

8 Yukon Gold Potatoes, peeled and cut into quarters
1 stick butter
4 oz Cream Cheese
2 tbsp fresh Chives
1/2 cup Half and Half
Salt to taste
Black Pepper
1/2 tablespoon flour or cornstarch

Put a 6 quart water to a saucepan and bring it to boil. Add some salt to water. Put the potatoes into the boiling water and let it boil until is soft for about 15-20 minutes. You can do this procedure while the meatballs is on the oven. Just make sure that you put the pot of water to a boil so its ready.
Drain water.
Put the potatoes back into the saucepan
Add the cream cheese, half and half , butter, salt and pepper.
Used a potato masher. And start mashing.
Mashed the potatoes. Until the desire consistency is achieved.
Keep it warm.

Preheat over at 375 degrees.
In a large bowl combined ground pork, ground beef, diced onion, diced garlic, salt, pepper, eggs, half and half, bread crumbs and grated carrots. You can use your mixer (which I did). Mix well until everything is combined.
Roll into 2″ ball and place it into a line baking sheet.
Bake it for at least 45 minutes, or no longer pink or with the inside temperature of 160 degrees.

While the meatballs is in the oven. Heat the pan.Add the butter, let it melt and then add the olive oil. Mix it together. And then, add the mushroom and onions. Until soft. For about 5 minutes. Add the half and half and then let it boil for another 5 minutes. Add the flour or cornstarch to add some creaminess to the sauce. Season salt and pepper to taste.

Plate it.

HI everyone. Last Saturday, I went to our local Walgreens. Which btw, one of my favorite store. They always have a great deal. I know some of you maybe thinking, clipping coupons is really taking a lot of times. But it doesn’t need to be like that. You don’t have to be extreme to save some money. Specially at this type of economy we have, I think every little savings count. So after stocking up on soda now it’s time for me to stock up on some healthy snacks. I spent $3.52 for everything I bought. And 1 hour for gathering my coupons and buying this. So I bought the following and made 3 transactions.

My CVS Awesome Haul

FREE DIET COKEThis shopping trip was last Jan 22. And I just wanted to share to you guys what an awesome trip I had that time. Went to CVS last Sunday, Jan 22, to pick up my pre-ordered 60 Diet Coke. We welcome our new member of our family! Max, our little Doxie! He’s so adorable. We have him for almost a year now. And since he arrived in our life, he only bring joy and happiness to our family. I love him!
